We have now eaten at Ristorante Da Luisetta, Colledoro (just outside Castelli) several times, each time delizioso, the only problem being … the vast quantity. If you are going to go and we do recommend on the quality of the food, do so on the lighter Friday option when Sig Luisetta serves only his beloved Baccalà (salt cod). Generally 5 dishes of exquisite salted cod presented in so many different tasty ways, you will feel obliged to find your nearest Baccalà Deli and try recreate them at home.

Gnocchi with Boiled Baccalà
Beautiful fat but light light gnocchi with a creamy boiled Baccalà sauce with plenty of lemon and parsley

Baccalà del Nonno Skipeci (Grandpa’s Salt Cod)
Simple but oh so delicious roasted Baccalà in a delicate wine & tomato sauce – that just calls for bread mopping.

Stunning – just like eating floaty tempura with chunky unfishy fish!

Baccalà All’Usanza dei Pescatori
Fisherman’s Salted Cod – lightly fried with lots of rosemary and garlic

Baccalà alla Trasteverina
Flaked salt cod fried served on a bed of onions with capers, parsley and lemon.

With regard to atmosphere, like so many Italian restaurants, dining at Ristorante da Luisetta with TV in the corner and harsh electric light.  However the TV at Ristorante da Luisetta gets turned off when it is time for the delightfully eccentric owner’s tour of the occupied tables to begin, telling stories of how your dish arrived on your plate whilst checking that you are eating and enjoying everything and I mean everything – one morsel left and he is a deeply offended man. Not many Italian restaurant owners are quite so convivial nor can they give you a full rundown of a recipe’s history particularly where they sourced their beloved Baccalà. It doesn’t matter if you don’t speak Italian as long as you are full-mouthedly mumbling “bella” each time he walks past your table and, eating and showing appreciation that is enough return conversation for Signor Luisetta.
